Raw cacao & berry tortes

I just looked at my calendar. Help! I need to maximise every spare moment to get everything done. Ce la vie; the life of a working, dream-chasing mum, right!? Here’s what I saw…


Friday – littlest daughter Lily’s 3rd birthday party and my friends & family book pre-launch/thank-you soiree
Saturday – Mindful Mum workshop, then newlywed friends over for dinner
Sunday – bake day to prepare 40 jars of my muesli for gift bags next week
Monday & Tuesday – work at my contract job by day, prep for launch by night
Wednesday – book launch


I needed to get ahead of myself and fast! Like the quote says: “Failing to prepare is preparing to fail”. So while Lily napped, I flipped open my favourite Dr Libby recipe book, found something appealing that I had most of the ingredients for, and got baking. 20 minutes later and I’ve got 4 delectable looking mini tortes to put in the fridge ready for Saturday night’s dinner party.


This recipe is my variation of Dr Libby’s, to suit the ingredients I have at home (and my taste buds!).


Raw cacao & berry tortes

Makes 6

Gather together for bases


1 1/2 cups Brazil nuts

3/4 cup sunflower seeds

5 Medjool dates, pitted

1/2 cup cacao powder

1/2 cup desiccated coconut

4 tbsp water


Gather together for ganache

1/2 large avocado, chopped

5 Medjool dates

1/2 cup cacao powder

1 cup frozen cherries

4 tbspn cream

pinch salt


Whip up the bases

Throw all the dry base foods into a food processor and process until combined

Take handfuls of mixture and press very thin onto a baking sheet, and shape into rounds using a cookie cutter (about 5cm diameter)

I layered all my rounds up with baking paper between each so they don’t stick together

Pop into the freezer while you make the ganache


Whip up the ganache


Throw all ingredients into a food processor and process until smooth




Use three base rounds per torte, spreading ganache between each

Top with raspberries and blueberries (cherries would’ve been nice but the season is over)

I’m going to finish them with a dusting of icing sugar on Saturday night


Little Lily is still asleep and I’ve made these, taken a proper photo (must use my camera more, instead of my phone!), downloaded it, typed this up to share with you… and still have time for a cup of tea for me. Proof that you can fit lots in without undue pressure. I’ll share more on the mindset and tips around this in a musing to come. For now… that cup of tea xx
